Advance preparation...Bake the muffins according to package
directions. Let cool completely, before slicing into cubes.
(Suggestion- make the muffins the day before)
Over medium low heat, sauté the celery and onion in butter until
tender... not brown.
In a large mixing bowl, combine the muffin cubes and celery /onion mixture. Add a small
amount of chicken broth at a time,
stirring gently in between additions, until the stuffing is moist, BUT
NOT SOGGY.
Spray a casserole dish with non-stick spray. Fill the dish with the
stuffing and bake until it's heated through, but not too brown on
top. 350 degrees. Maybe 30-35 mins? Taste test with a fork in the
middle to be sure it's hot, but not too dry.
