     Moist fluffy white cake

Preptime   1 hr.

3 c all purpose flour
1T baking powder
1/2 t salt
1 c unsalted butter ( 2 sticks)
2-1/4 c granulated sugar
1T clear vanilla extract
7 large egg whites
1 c whole milk (or 1 c 2% with 1 T vinegar/ homemade buttermilk)

Allow all ingredients to come to room temperature first. Cream the butter and sugar with the paddle attachment for about 5 min. Until fluffy. Meanwhile, sift the baking powder, salt, and flour(3 times). Combine egg whites, milk, and vanilla together. Once butter is creamed well, add 1/3 of dry ingredients until combined well, 1/2 of wet, 1/3 of dry, rest of wet, and then remaining dry. Pour immediately into wax paper lined pan. Bake @ 350 for 25-35 min. Depending on oven.
Can be stored in the freezer for up to a month if wrapped well in plastic wrap.
