Directions-
In a bowl, beat the eggs and sugar until thick and pale yellow, about 5 minutes. Add the butter, ricotta, milk, extra virgin olive oil, vanilla and lemon rind. Mix well.
Mix in the flour, baking powder, baking soda & salt. Let it rest for a few minutes.
Mix 2 cups of the grapes to the mixture.
Transfer the mixture to a buttered & floured (or lined with parchment paper) baking dish.
Bake in a pre-heated oven of 180 degrees Celsius for 15 minutes.
After 15 minutes, take the cake out of the oven and distribute the remaining grapes on the top of the cake.
Bake for 35 to 45 minutes more until the top turns golden brown and the knife or toothpick you insert in the middle of the cake comes out clean.
Let it cool.
Garnish with a small bunch of grapes & fresh mint leaves on top then sprinkle with icing sugar.
