Mix all cheese, sugar and eggs together with food mixer. Finely grate rind of a lemon and orange into mixture, then add vanilla extract, juice from the lemon and double cream and mix thoroughly.

Pour onto chilled base. Double wrap cake tin in foil place in large roasting tin. Pour boiling water into tin, needs to come half-way up the cake tin. VERY CAREFULLY put into over at 150 deg C and bake for 50mins. Then open door for a minute, shut door and leave to cool. Put cheesecake in fridge for 6 hours.
