     Candied Sweet Potatoes

Ingredients
3 lbs. large yams or sweet potatoes, peeled
1 c. packed light brown sugar
1/2 stick butter (or 1/4 c. butter)
1/4 c. water
1/4 tsp. salt
1/4 to 1/3 c. bourbon, if desired
 

Instructions
Preheat oven to 375.
Cut each yam or sweet potato crosswise into 1 1/2 sections. Steam potatoes on a steamer rack set over boiling water, covered, for 10 min. Cool uncovered. Transfer to a buttered 3-quart shallow baking dish.
In small pot, simmer brown sugar, butter, water and salt, stirring occasionally, until sugar is dissolved and syrup is thickened, about 10 min. Stir in bourbon to taste, if desired. Drizzle syrup over potatoes and bake in middle of oven, uncovered, basting occasionally, for 1 1/4 hours.
Potatoes may be made 1 day ahead and chilled, covered, Reheat before serving.
