     Beef Tenderloin

Ingredients
Trimmed beef tenderloin, tied 3 pounds for eight
1 Tbs. oil
1/4 cup brown sugar
3 Tbs. ground coffee
2 tsp. garlic powder
2 1/2 tsp. salt
1 tsp. pepper
1/2 tsp. cayenne
2 tsp. smoked paprika
 

Instructions
Brush with oil. Rub with mix. Wrap in saran and chill 1-4 hour. Pre-heat oven to 450 degrees. Place on rack in pan, add 4 cups water to pan. Roast 45-55 minutes (145 degrees med rare). Let stand 10 minutes. Slice thin to serve.
