Meanwhile, prepare the peanut dipping sauce-
Combine soy sauce, red pepper flakes, coconut
milk, peanut butter, brown sugar, and some oil
in a saucepan. Cook over low heat for about 10
minutes until it thickens.
Thread chicken strips onto skewers and grill
until cooked through, occasionally basting to
keep moist.
Serve with the peanut dipping sauce.
