     Buckwheat Crepes with Ham, Gruyere, & Brie

1 3/4 cup buckwheat flour
4 tbsp all purpose flour
1/2 tsp salt
pinch pepper
4 tbsp butter, melted
4 cups water
thinly sliced ham
italian herbs

Mix all dry ingredients. Beat in egg. Beat in water. Beat in melted butter. Once batter is thoroughly beaten, let rest for 15 minutes. wrap the ham around gruyere, brie, and herbs in the shape of a square. Heat this package in microwave until it is warm and starting to melt. Cook the crepe on one side and place package in middle. Fold sides around package and let cook on both sides. When crepe is crispy on both sides, top with a fried egg, garnish with herbs, and serve.
