     Apple Pancakes

1 c all purpose flour
2 Tbsp white sugar
2 tsp baking powder
1 tsp salt
1 egg, beaten
1 c milk
2 Tbsp vegetable oil
1 tsp of cinnamon
2 large apples

1. In a large bowl, mix flour, sugar,cinnamon, baking powder and salt. Make a well in the center, and pour in milk, egg and oil. Mix until smooth. Core apple and slice into thin strips. Cheese slicer could be used for thin strips.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 c for each pancake. After batter is poured place desired amount of apple slices on pancakes.
Brown on both sides and serve hot.
