     Cider Braised Beef Brisket

Ingredients
5 lb beef brisket
whole garlic cloves
dried rosemary
kosher salt, pepper
olive oil
1 yellow onion, halved and sliced
1 pint apple cider
 

Instructions
Preheat oven to 475 degrees. Trim off part of the fat layer on the bottom of the brisket. Generously salt/pepper each side and place in a roasting pan that has been coated with oil. Brown in the oven for 20 minutes, then throw in garlic, rosemary, onion, and apple cider. Cover pan tightly with 2 sheets of aluminum foil and place on a baking sheet. Turn oven down to 325 and braise for 3 hours. Take meat out and let sit for at least 20 minutes. To serve, cut brisket into medallions against the grain.
