     Christmas Cake (adapted from Be-Ro Recipe Book)

Ingredients
300g self raising flour, plus some extra
200g caster sugar
5 eggs beaten with 125ml/8tbsp milk (or half milk and half brandy)
1 tsp each mixed spice, cinnamon and nutmeg
200g currants
200g sultanas
200g raisins
100g glace` cherries
100g mixed peel or candied peel
 
1 tsp cloves boiled in a 100ml water
1-2tbsp treacle dissolved in hot water
2 tots dark rum and brandy (optional)
100g dried cranberries (optional)
100g dried prunes, diced (optional)
200g margarine
100g ground almonds

Instructions
1.Place the dried fruits in a mixing bowl, add the rum and brandy if using, mixed spice, cinnamon and nutmeg and add some flour and mix until the fruits are coated in a thin layer of flour and do not stick. Leave overnight for the spices and spirits to infuse. 2. Sieve the flour and almonds in another bowl. 3. Cream margarine and sugar, stir in flour mixture a little at a time, alternating with egg mixture, the clove water and the dissolved treacle. 4. Add fruit and mix thoroughly. 5. Place in greased and lined tin and bake in a moderate oven, 170C/gas mark 3/150 Fan for around 50 minutes, until skewer comes out clean.
