     Baked Eggplant

Ingredients
Eggplant-medium
1 egg beaten(can use water instead
Italian Bread Crumbs
Parmesan cheese shredded
Pam Spray
salt, pepper, italian seasoning
Marinara Sauce for dipping
Foiled Lined cookie sheet sprayed with Pam
 

Instructions
Prepare a dish of ice water and set aside. Trim the purple coating off the eggplant. Slice in circles or in french fry style strips. Immediately place in ice water. (this will keep the eggplant from turing and will remove any bitterness)
Beat egg and add salt, pepper, and Italian seasoning. Pour out bread crumbs into a dish and mix in parmesan cheese Remove eggplant from ice water and pat dry Dip pieces into egg mixture and then into bread crumb mixture Place on foil lined cookie sheet
Be sure to spray the foil with Pam Place the eggplant slices onto the cookie sheet Spray the slices VERY WELL with Pam
Place in 350 degree oven and bake for 30 min. or until the center is soft If using circles there is no need to turn If using french fry strips turn once and respray Enjoy dipping with sauce
