     Gingerbread Man Cookies

Ingredients
5 to 5 1/2 cups all purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
2 teaspoons ground ginger
1 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 cup 2 sticks butter room temperature
1 cup packed light brown sugar
 
1 large egg room temperature
1 cup unsulfured molasses
1 teaspoon vanilla extract

Instructions
1. Blend flour, baking soda, salt and spices. Put aside. 2. Mix butter, brown sugar and eff until smooth. 3. Add unsulfured molasses and beat until fluffy. 4. Add vanilla extract. 5. Add flour mixture, 1 cup at a time. Should be a firm mass. If still too wet, add between 1/4 to 1/2 cup flour a bit at a time until a firm mass; must not be crumbly. 6. Turn onto lightly floured surface. Divide into 2 balls and flatten into disc shapes. 7. Wrap with plastic wrap and put in refrigerator for at least 2 hours and up to 1 week.
Preheat over to 350 degrees Fahrenheit. Roll each disk to 1/8 inch thick. Use cookie cutouts and put onto parchment lined cookie sheets 1 inch apart. Decorate if desired. Bake for about 12 minutes until firm. Place on cooling racks and decorate when cool.
If you did not decorate with food grade sequins and balls. You can frost or ice and decorate when cool.
