3/4 cup mini chocolate chips or dried fruit (optional)
Instructions
Preheat oven to 325F. Grease 9x13 baking pan with coconut oil.
Mix ground flaxseed with water in a small bowl and let sit for 3-4 min.
Pulse pepitas in a food processor to break up to the size of sunflower seeds.
Add coconut oil, almond butter, honey, and vanilla to the flax mixture and mix well.
Add almond flour and baking soda and stir to combine.
Add almonds, shredded coconut, pepitas, sunflower seeds, sesame seeds and chocolate chips or dried fruit. Stir to combine.
Spoon batter into prepared baking pan. Spread out and flatten with a spatula.
Bake for 22-23 min, or until golden brown. They will puff up slightly while baking, so immediately after removing from the oven, flatten the bars with the spatula.
Let cool completely in a pan before cutting into bars. Cut into bars and wrap individually and store.
