Cut chicken in half. Pound till 1/2 in thick. Whisk egg whites, cornstarch and lemon juice in small bowl for dipping. Combine bread crumbs, cheese, parsley, salt & pepper in shallow bowl.
Dip chicken in egg white mixture, then in bread crumb mixture. Set on baking rack for 30 min to dry. Sauté chicken in skillet over medium heat until golden brown on each side.
Bake 450 for 10 min.
