     Soft and Puffy Peanut Butter Coconut Oil Cookies

Ingredients
3/4 cup creamy peanut butter
1/2 cup coconut oil, softened
1 cup light brown sugar, packed
1 large eggs
1 tablespoon vanilla extract
1-1 1/4 cups all-purpose flour
2 teaspoons corn starch
1 teaspoon baking soda
1/4 teaspoon salt
 

Instructions
TO the bowl of a stand mixer with paddle attachment, combine peanut butter, coconut oil, egg, and sugar and beat o medium until creamy and fluffy. Stop, scrape down the sides of the bowl, add the vanilla and beat to incorporate. Add 1 cup of flour, corn starch, baking soda, and optional salt and mix until just combined.
Using medium cookie scoop, form mounds that are 2 heaping tablespoons in size. Place dough mounds on a large plate and slightly flatten into desired shape. Cover with plastic wrap and refrigerate for at least 2 hours.
Preheat oven to 350 degrees and line a baking sheet with sil-pat or parchment paper. Place mounds on baking sheet, spaced at least 2 inches apart. Bake for 7-9 minutes.
Allow cookies to cool on baking sheet for 5-10 minutes. Store cookies in an airtight container.
