     Raw Moroccan Carrot Salad

Ingredients
1.5 lbs. carrots, peeled and shredded
2T olive oil
1T prepared Charmoula
2T fresh lemon juice
2 tsp. agave syrup
1/2 c fresh parsley, cilantro or mint leaves, chopped
1 tsp. salt or to taste
1/4 c Greek yogurt (optional)
1/2 c raisins (optional)
 
1/2 c toasted, slivered almonds (optional)
additional fresh cilantro or parsley for garnish if desired

Instructions
Combine all ingredients with exception of almonds (if using) in medium size mixing bowl and toss well to incorporate.
Garnish with toasted almonds and fresh cilantro/parsley if desired
Serving Suggestions
Serve room temperature or refrigerate and serve chilled.
