     Cracker Barrel Hash Brown Casserole

Ingredients
2 lbs. frozen country style hash browns
salt to taste
pepper to taste
2 cups sour cream (low fat okay)
1/2 cup butter or margarine
1/2 cup chopped onion
2 cups grated cheddar cheese (low fat okay)
1 can cream of chicken soup
 

Instructions
Place potatoes in a greased 9x13 pan. Season with salt and pepper. In a bowl, combine minced onion, sour cream, and cream and cream of chicken soup. Pour soup mixture over potatoes; sprinkle with cheddar cheese and melted butter. Bake in 350 degree oven for 45 minutes, or until all is completely warm, and the cheese begins to melt.
