     Baked Eggplant Parmesan

Ingredients
A. 1 eggplant
a. Salt
b. Egg
b. Italian breadcrumbs
c. 2 cups pasta sauce
c. 1 tablespoon basil paste
C. 1/4 of a 15 ounce tub of ricotta cheese
c. large handful of mozarella cheese shredded
c. 1/4 cup Parmesan cheese
 

Instructions
slice eggplant thinly and coat both sides with salt. Let sit in colandar for 30 minutes or so to drain. Dry the slices.
dip eggplant slices in egg. Then coat each side in breadcrumbs. Bake in 450 oven for 6 minutes each side.
mix the c ingredients together and top eggplant slices evenly with mixture. Reduce oven heat to 350 and bake for 20 minutes or so
Serving Suggestions
Makes at least 12 slices. About 150 calories per slice
