     Smoked Ribs

Ingredients
1 Tbsp sea salt
1 Tbsp chili powder
1/2 C. brown sugar
1 Tbsp onion salt
1 Tbsp garlic powder
1 Tbsp pepper
1/4 C. paprika
1 tsp. cayenne
 
Brine
1 cup apple cider vinegar
4 cups water
2 tablespoons kosher salt
2 tablespoons freshly cracked black pepper
10 garlic cloves, smashed

Instructions
Pull membrane off meat. Soak ribs in brine for about 4 hours. Remove ribs from brine and pat dry. Rub meat with olive oil then apply the dry rub.
Smoke ribs @ 220 degrees for about 3 hours rotating every 45 minutes. Then wrap ribs in aluminum foil and crank up the heat a little for 1-1/2 hours.
