     Amazing Butternut Squash Casserole

Ingredients
3-4 cups butternut squash, roasted or boiled
1/2 cup mayonnaise
1/2 cup finely chopped onion
1/4 cup finely chopped celery, optional
1/4 cup finely chopped pepper (red or green) optional
1/4 cup finely chopped mushrooms, optional
1 egg, lightly beaten
1 teaspoon brown sugar
salt and pepper to taste
 
1/4 cup crushed saltine crackers
2 tablespoons grated Parmesan cheese
1 tablespoon butter, melted

Instructions
Saute onion, celery, peppers and mushrooms in small amount of butter until soft. (if you don't mind crunchy veggies in your dish, skip this step)
In a large bowl, mash the squash. Mix in the mayo, veggies, egg, brown sugar, salt and pepper. Pour mixture into a 2 quart baking dish.
In a small bowl, mix together crackers, Parmesan cheese and butter. Sprinkle over the sqaush mixture.
Bake, uncovered in preheated oven for 35 to 45 minutes, until the topping is lightly browned.
