     Southern Collard Greens (no meat)

Ingredients
small onion diced
3 garlic cloves minced
2-3 cups of vegetable broth (I used 2)
1 teaspoon smoked salt ( I used salt and some smoked pepper)
1/2 teaspoon red pepper flakes
2 pounds or one kilo of collard greens
black pepper
hot sauce
 

Instructions
coat a large deep skillet or pot with vegetable oil. Saute the onions lightly over med heat and then add the garlic. After about 2-3 minutes add in vegetable broth (Iused water with soup powder because I was out of broth).
Season with smoked salt and red pepper flakes. Taste and adjust seasonings as needed. Make sure it is to your liking as this is how the greens will taste.
Bring to simmer and reduce heat. Do not bring to a boil. Add the greens, which may be piled high in the skillet as they shrink while cooking.Simmer for an hour to an hour 30 mins. Add more seasoning if needed. Add hot sauce or vinegar if desired. Add fresh tomatoed and/or red peppers if desired.
