Preheat the oven to 425 degrees.
In a large saucepan, begin sautéing the bacon. Once some fat has been rendered, add the shallots. Saute until shallots are soft and bacon is brown.
Remove from heat and toss in the bread crumbs, stirring thoroughly.
Roll the tenderloins in the breadcrumbs, one at a time. Place them side by side in a baking dish and cover with remaining bread crumbs.
Place in the oven and cook for about 30 minutes, or until the meat has reached 160 degrees.
Slice and serve, spooning toasted breadcrumbs on top.
