     Alex's Crispy Oven Baked Home Fries

Ingredients
6 Yukon Gold/All Purpose potatoes meduim size
1 medium Vadalia/Sweet Onion
1 medium Red or Orange Bell Pepper
4 Cloves Garlic
4 Tbl Spns Regular Olive Oil
1/4 C Unsalted Butter melted
Cracked Black Pepper to taste
Kosher salt to taste
Shredded White Sharp Cheddar Cheese (OPTIONAL)
 

Instructions
Pre-heat oven to 425 Degrees F. Rinse and chop the potatoes into bite sized or smaller chunks, leaving skin on or off. Chop bell pepper and onion into small square chunks, mince garlic. Mix melted butter and olive oil.
Transfer chopped vegetables into greased glass oven safe baking dish, 9x12 should be large enough. Pour mixture evenly into baking dish distributing mixture evenly. Sprinkle salt and pepper onto vegetables and mix.
Place in middle rack of 425 degree pre-heated oven uncovered. Cook for 45 minutes to 1 hour or until potatoes are soft inside and golden brown on top.
(OPTIONAL)during the last 10 minutes of cook time, (approx. 35-40 minute mark) generously sprinkle shredded cheese evenly on top of vegetables. When it's all done be sure to let them rest for 5 minutes before serving, potatoes will be hot! Serve and enjoy!

Pairs well with fresh squeezed OJ, bacon and eggs!
