1. Cut tilapia filets in half to make 4 smaller
pieces
2. Crack eggs and place 1 egg and 1 egg white
into small bowl and whisk together.
3. Place bread crumbs on flat surface such as
on tinfoil.
4. Place tilapia filet in egg mixture and make
sure fully satiated with eggs.
5. Place egg covered tilapia filet into bread
crumb mixture and flip over continuously until
completely covered with bread crumbs and set
aside.
6. Repeat steps 4 and 5 until all filets are
complete.
7. Place olive oil into small skilletand turn
onto medium-high heat.
8. Place 2 filets into skillet at a time and
allow to cook 2 minutes on each side - or until
golden brown.
9. Once cooked I usually set the filets on a
plate covered with a paper towel to collect the
extra oil.
10. Repeat step 8 until all filets are cooked
and serve.
