     JEAN'S FRIED PIES

Ingredients
1-1/3 cup dried apples
3 cups water
1/4 cup sugar
2 TBS. lemon juice
1/2 tsp. lemon rind
1/2 tsp. ground cinnamon
1/8 tsp. salt
1/8 tsp. nutmeg
3 cups flour
 
1 tsp salt
1 cup shortening
6 TBS. cold water
1 quart cooking oil

Instructions
Combine apples and 3 cups of water in a 2-qt. saucepan. Bring to a boil and reduce heat. Cover and simmer 35 minutes or until apples are tender. Puree hot, drained apples in a blender until smooth. Combine apples with sugar, lemon juice, lemon rind, cinnamon, salt and nutmeg. Mix well and set aside.
Combine flour and salt in a bowl. Cut in shortening until crumbly. Sprinkle water over surface and stir until moistened. Shape into a ball and divide in half. Roll each half into a 16-inch square on a floured surface. Cut into 16 squares. Place 1 TBS. of apple filling in the center of each square. Fold squares over into triangles. Dampen and seal edges. Press edges with a fork. Keep pies covered with a damp cloth until fried. Repeat with remaining dough.
Heat 2 cups cooking oil in a 10-inch skillet to 375 degrees. Fry pies until golden brown, turning as needed. Drain on paper towels. After frying 16 pies, pour out oil and add fresh remaining oil. Heat as before and fry remaining pies.
