     Butternut Pumpkin Soup

Ingredients
2 Tbl spoons butter
1 Leek
Half Bunch Celery
2 Litres Vegetable Stock
Half Butternut Pumpkin
300ml lite cream
French herbs
 

Instructions
Cube pumpkin, slice leek and celery. Melt butter over medium heat. Add pumpkin, leek, and celery. Add herbs. Coat ingredients with melted butter.
Pour in vegetable stock. Cook until ingredients are soft. Blend until desired consistency. Return to soup pot to warm, add cream and stir.
