     Mushroom and Brie Soup

Ingredients
a. 24 ounces whole mushrooms, quartered
a. 1 tablespoon olive oil
b. 1/4 cup butter
b. 1/2 onion chopped
c. 4 cloves garlic chopped
c. teaspoon or so thyme
c. 1 leek chopped
d. 2 tablespoons flour
e. 1/2 cup dry white wine
 
f. 8 ounces brie cheese cut into pieces
f. 2 cans chicken broth
f. salt and pepper to taste
g. 1/2 cup heavy whipping cream

Instructions
Toss mushrooms in olive oil and cook on 400 for 20 minutes.
Heat butter in skillet and add onion. Cook for 5 minutes. Add garlic, thyme, and leeks and cook for a minutes. Add flour and cook for 2 minutes. Turn off heat and add wine to the pan.
Dump skillet ingredients and mushrooms into crockpot and add cheese and chicken broth. Cook over low heat for about 4 hours. Add salt and pepper to taste.
Add cream and puree the mixture.
