     Zucchini Fries

Ingredients
1 Peeled Zucchini
3/4 C Italian Bread Crumbs
1/4 C Parmesan
1/4 TSP Salt
1/4 C Olive Oil
 
Instructions
Preheat oven to 435. Line baking sheet with parchment paper lightly greased with cooking spray.
Cut zucchini in half lengthwise and remove seeds. Slice into 1/2 x 1/2 x 4 inch pieces.
Combine dry ingredients on plate. Coat pieces in oil and coat in breadcrumb mixture. Place on baking sheet and bake for 15 minutes.
