     Easy Orange Marmalade Chicken

Ingredients
4 boneless, skinless Chicken Breasts
1 T. butter, melted
1 T Extra Virgin Olive Oil
2 t. Grainy Dijon Mustard
1 c. Organic Orange Marmalade
2 T.Lite Soy Sauce
1 T. Balsamic Vinegar
1/2 t. Freshly Ground Black Pepper
6 Green Onions, green tops, chopped
 
1/2 t. garlic powder
1/4 t. Chipotle Powder
1 T. Cornstarch
2 c. Brown Rice

Instructions
Preheat oven to 350 degrees. Place chicken breasts in a baking pan or dish.
Mix all ingredients together except cornstarch and rice in mixing bowl. Pour sauce mixture over chicken. Bake at 350 degrees for 25-35 minutes (or just until chicken is completely done and juice runs clear.)
Once chicken is done remove it to plate and cover to keep warm. Transfer sauce into saucepan or small skillet. Sprinkle cornstarch into sauce and whisk constantly over medium heat until sauce thickens.
Place 1/2 c. hot brown rice in each of 4 serving bowls. Top each with a chicken breast and some of the sauce. Garnish with a little extra green onion if you wish.
