     Sandy's Sweet Potato Casserole

Ingredients
6 cups mashed sweet potatoes (I use fresh, not canned, about 5-6 potatoes)
2 cups sugar
4 eggs
2 tsp. vanilla
1 cup melted butter
2/3 cup heavy whipping cream
2 tsp. cinnamon
Topping-
 
2 cups light brown sugar
2/3 cups flour
2 cups pecan pieces -
(I use 1 cup of pecan pieces and 1 cup of Fresh Gourmet Honey Roasted Pecan Pieces)
1 cup melted butter

Instructions
Peel, cut into about 1 ½ inch pieces and boil sweet potatoes until soft. Rinse and mash with a mixer. Measure out 6 cups mashed potatoes into a large bowl. Add all other ingredients and mix. Put in a baking dish – 9X13 pan or 8 X 8 large Corning Wear Dish will both work.
Mix all the topping ingredients. Put on top of sweet potatoes in the pan. Bake at 350 for between 30 and 60 minutes – until top is bubbly.
You can prepare it ahead of time (like a day or two) and cook on the day you plan to eat this. Makes 12 large servings.
