     Broiled Monkfish

Ingredients
1 lb monkfish filet
3/4 c red wine vinegar
1/4 c olive oil
1/4 c sugar
4 oz diced green chilies
4 oz diced red pimentos
1/2 onion diced small
2 tsp mustard seed
1/2 tsp thyme leaves
 
6 cloves minced garlic
1/2 tsp salt
dash white pepper

Instructions
Rinse monkfish and remove outer membrane till firm white meat is exposed. Cut fish into 8 oz portions and then butterfly to 1 inch thickness and 1/3 inch deep cross scores. Prepare marinade- add all ingredients together and stir until sugar dissolves. Place fish in a container large enough that portions can be laid flat. Pour marinade over fish and let sit for 1 hour, turning fish after 1/2 hour. On top shelf of oven broil fish for 5 to 8 minutes on each side and serve. Should be 130 to 140 degrees center.
