     Flounder Almandine

Ingredients
2 lbs frsh slounder fillets
1 tsp salt
dash pepper
1 c flour
1/2 c butter or margarine,melted
1/2 c blanched slivered almonds
2 tbl chopped parsley
 

Instructions
Cut fillets into serving size portions. Sprinkle with salt and pepper. Roll in flour. Fry in butter. When fish is brown on one side, turn carefully and brown the other side. Cooking time approximately 7 to 10 minutes, depending on thickness of the fish. Remove fish from pan and place on a hop platter. Fry almonds until lightly browned. Add parsley and serve over fish.
