     Crepe Manicotti

Preptime   2 1/2 hrs

3 eggs
1-1/2 cups low fat milk
1-1/3 cup flour
1/2 tsp salt
2 tsp vegtable oil
Vegtable cooking spray
2 lb container Ricotta cheese
1/4 cup parmesan cheese
1 - 2 tbsp parsley flakes
1 egg
salt & pepper

Combine all ingredients for crepes in blender and blend for 30 seconds. Scrape down from sides of blender. Blend for an additional 5 minutes. Refrigerate for 1 hour before assembling crepes to allow gluten to swell.
Mix all filling ingredients and set aside.
Spray crepe maker or small non-stick frying pan with cooking spray. Place over medium heat and pour in approximately 1/4 cup of mix. Cook crepes for approximately one minute on each side, adjusting time for desired result. Place wax paper between each finished crepe until ready to fill.
Place 1/4 cup of filling on each crepe, spreading slightly and roll. Put spaghetti sauce of your choice on bottom of baking dish reserving some to pour over each layer of crepes. Place crepes seam side down in baking dish. Bake at 350 degrees for 15 - 20 minutes. Do not cover.
