Place flour in dish 1, add breadcrumbs, parmesan, and Italian seasoning in dish 2, and eggs in 3. Coat eggplant with flour, egg, and mixture then press to adhere.
Bake for 12 minutes at 425, flip, then bake 12 more minutes. Sprinkle on sauce and mozzarella.
