     Corn Chowder

Ingredients
3 cups fresh or frozen kernel corn
1 cup chopped onion (1medium)
1 tablespoon olive oil
3 cups chicken broth
2 cups cubed, peeled potato (2medium)
3 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
2 1/2 cups milk
 
6 slices bacon
1 cup cheddar cheese
optional- red or green bell pepper or poblano pepper

Instructions
In a large saucepan cook onion and peppers (optional) in hot oil until tender. Stir in chicken broth and potato. Bring to boiling, reduce heat and simmer covered for 10 minutes. Stir in corn and simmer 10 more minutes until potato and corn are tender, stirring occasionally. In a small bowl combine flour, salt and pepper. Stir milk into flour mixture; add to corn mixture in saucepan. Cook and stir until thickened and bubbly. Add bacon and cheese. Stir until cheese is melted. Enjoy!
