     Crab, Chili, and Mint Endive

Ingredients
8 oz. Crab meat, drained
1 Lg. Red chili (seeds removed), finely chopped
2 Tbsp finely chopped mint leaves
2 Tsp grated lime rind
2 Tbsp lime juice
2 Baby Endive, separated
 

Instructions
Combine all ingredients (except endive), season with fresh black pepper to taste, and spoon on to the endive leaves.
Prepared mix may be stored up to 3 hours, covered and refrigerated.
