     Texas 10 Bean Soup

Ingredients
2 cups assorted beans mixture
1 lb diced ham
1 package uncooked bacon, cut into bits
1 1/2 cups diced celery
1 onion, chopped
1 clove garlic, minced
3/4 tsp. salt
1 lb. can Cajun Stewed tomatoes (or regular stewed tomatoes)
1 tsp. cumin
 
-Cajun seasoning

Instructions
For beans, you can make your own assortment or buy a bag of mixed beans. We make this often so we buy bags of assorted beans and mix them all in a storage bucket.
Wash beans, cover with water, and soak overnight. Drain. Cover with water again. In a separate pan, cook bacon till crisp. Take out the bacon, leaving grease. Add onions and cook till soft, then add garlic and cook 1 minute longer.
Add all ingredients to the beans, including onions, garlic, and bacon. Cover and bring to a boil. Reduce heat and simmer 2-3 hours, until beans are soft. Add Cajun seasoning to taste.
We always eat this on New Year's Day. It has black eyed peas in it, which you must eat on New Year's Day for good luck in the South.
