     Ginger Snaps (soft)

Ingredients
2 1/4 cups flour
2 tsp ground ginger
1 tsp baking soda
3/4 tsp cinnamon
1/4 tsp cloves
1/4 tsp salt
3/4 cup butter at room temperature
1 cup sugar
1 egg
 
1/4 cup molasses
1/4 cup sugar to roll cookies in

Instructions
Preheat oven to 350 degrees. Combine flour, ginger, soda, cinnamon and salt. Set aside. Beat butter 30 seconds, until soft. Add sugar and beat until fluffy. Add egg and molasses and beat well. Add 1/2 flour mixture and stir in, then stir in rest of flour mixture. The dough should be at a consistency that you can roll with your hands. You may have to add more flour. Roll into 1 inch balls, then roll balls in sugar. Place cookies 2 inches apart on ungreased cookie sheet and bake for 8 to 11 minutes. Do not brown. These cookies should be almost under baked in the middle. Let cool 2 minutes and transfer to cooling rack. Store in airtight container.
