     Ragu Soy Sauce Spaghetti

Ingredients
Half a bag of spaghetti
1 lb of ground beef
1 onion, finely chopped
4 cloves garlic, minced
1 sprig thyme, leaves removed
1 zucchini, chopped into 1/2 in pieces
1 can of diced tomatoes
2-3Tb of soy sauce
1/4c parmesan cheese, grated
 
EVOO
Salt
Pepper
1/2 c of pasta water.

Instructions
Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Set aside about 1/2c of pasta water. Drain the spaghetti and set aside.
Heat 1 Tb of EVOO into large pan over medium heat. Add onions and garlic until softened. Add ground beef and season with salt and pepper. Cook until no longer pink.
Add zucchini. Cook for about 5 minutes until softened. Add soy sauce (to taste) and thyme. Cook for about 30 minutes until thickened. Add the diced tomatoes and pasta water. Simmer for about 10 minutes until thickened.
Add the spaghetti to the sauce in the large pan. Toss to combine. Plate the spaghetti, spoon some sauce on top and sprinkle parmesan cheese on top.
