     Easy Prime Rib

Ingredients
Prime Rib-bone in-tied
Rub
1 tsp Kosher Salt
1 tsp Ground Pepper
1 tsp Rosemary
AUJUS
Pan drippings from roasting pan
1 stick butter
 
4 cups beef stock
2 cups red wine
1 sprig of rosemary leaves chopped up

Instructions
Rub prime rib with rub mix several hours to one day before cooking. Sit prime rib out and allow to come to room temperature before cooking (3 hours)
Place the roast, ribs down or fat side up, in a heavy stainless-steel Roasting Pan or other metal roasting pan. Select a roasting pan that has sides at least 3-inches deep. (I do not recommend using nonstick pans, as these pans yield fewer of the cooked-on bits that make the tasty au jus juice or gravy.) The rib bones are a natural rack; you will not need a metal one.
Heat oven to 500 degrees. Cook prime rib 5 minutes per pound then turn oven off. Let stand in oven for 2 hours. Very important not to open oven during the entire process.
Check with instant read thermometer. Internal temperature needs to be 120. If not done at the end of 2 hours turn oven on 325 and roast slowly until temp reads 120. Let roast sit on platter at least 30 minutes before carving. Add the beef stock and red wine to roast pan drippings and cook until the liquid is reduced by half, about 20 minutes. Whisk in the rosemary and season with salt and pepper
