     Ricotta, bacon and spinach Pinwheels!

Ingredients
Pastry-
450g flour
2 1/2 tblspoon dried yeast
50g butter
Pinch of salt
1 beaten egg
Warm water
Filling-
500g ricotta
 
1 egg
3 cubes of frozen spinach(Take them out before and press them with a fork to take the excess water)
4-5 slices of bacon cut in cubes (used Arrosto bacon)
Salt and pepper
Some milk to brush pastry
I have used these other ingredients cause I have some pastry left and make some with caponata, tuna
and corn

Instructions
Ricotta, bacon and spinach Pinwheels! Good for a savoury appetizers on Valentine's Day!!
Pastry method- Sieve flour, add the dried yeast, salt, butter and the beaten egg. Mix all ingredients together and add some warm water, form a ball and leave aside, in a bowl cover with cloth in a warm place till it rises. Meanwhile in a another bowl mix the ricotta, spinach, egg, bacon, salt and pepper. Roll out pastry and cut in long strapes of 5cm wide and 25cm long. Spread some of the mixture onto the straps of pastry, leave 1cm at the end and brush some milk and roll. Complete this procedure till you finish all pastry. The caponata ones the same. Mix caponata, tuna and corn together and spread it on the pastry strap. Put them in a greased baking dish and brush each one with milk. Leave a wide space between them, don't put too much mixture, especially the ricotta ones or else the pastry will expand and will tearing apart. Bake for 35-40 minutes on middle shelf or till golden brown on 180c. So, delicious!! Enjoy --)
