     Gharayba (Arabic shortbread cookies)

Ingredients
1 cup butter
1 1/2 all purpose flour (sieved)
1/2 cup ground almonds
1/2 cup icing sugar
1 tblspoon rose water but instead used ( orange blossom water) they turns out very good!
1/2 teaspoon almond essence
20 whole almonds to decorate
 

Instructions
Cream butter and sugar until light and fluffy. Add the flour little by little at a time, the rose water or the orange blossom water, almond essence and the ground almonds. Use your hands to knead softly, to make sure there are no lumps. The dough should be soft and not sticky. If it is sticky add some more flour. Form the dough into 1 inch balls, and roll each ball with your palms, to form a spherical shape. Then put one whole almond in the middle. Place cookies in a greased baking dish. Preheat oven on 180c then using the broiler or grill, place the baking dish on the lower oven shelf and bake for about 15 minutes, or until golden brown. Sometimes they crack around the almond. Stay with them, don't leave the oven alone cause they will get burn very quickly. Enjoy they are awesome! -)
