     Hawaiian Chicken and Rice

Ingredients
4 boneless, skinless chicken breast
3 tablespoon butter
1/4 cup soy sauce
16 oz pineapple tidbits
1/4 cup honey (or 3 tablespoons brown sugar)
2 teaspoon sugar
1/2 teaspoon cloves and cinnamon
3 tablespoons flour
 

Instructions
Melt your butter in a large skillet. (we use a cast iron one…like this!) Add chicken and cook about 3-4 minutes on each side. Remove the chicken from the pan and set aside. Add the pineapple, soy sauce, honey, sugar, and spices to the pan scraping the bottom a bit to bring up the browned bits. Let come to a boil. Turn the heat down a bit. Push aside the pineapple and add the flour to the liquid, slowly…whisking with a fork as you add it. Add enough flour to bring the sauce to the thickness you prefer. Remove from heat. Serve the chicken with sauce on rice…for the best possible gluten- free meal (in our opinion!). Of course, minute rice makes this easy!
