     Belgian Waffles

Ingredients
2 cups flour
2 tsp baking powder
2 TBsp confectioners sugar
1 TBsp vegetable oil
2 cups milk
3 eggs, separated
2 tsp vanilla
pinch of salt
 

Instructions
Combine the flour, baking powder, confectioner's sugar, oil milk and egg yolks. Beat the egg whites until they stand in soft peaks and fold into the batter. (Do not overmix) Using a 4 oz ladle, pour 1/8 of the mixture onto a lightly greased waffle iron.
