Cook carrots in salted water. Mash with fork. Sauté onions
and bell pepper in a little butter or Pam. Add all other
ingredients to carrots except 1/2 of the buttered cracker
crumbs.
Mix well and pour into greased baking dish. Top with
remaining cracker crumbs. Set dish in a shallow pan of water
for 30-40 minutes at 400 degrees.
