Rub pork with 1 Tbsp olive oil then apply 2 Tbsp of
your favorite rub. Brown pork in 2 Tbsp olive oil in
a skillet over medium-high heat 3 to 4 minutes on
each side.
Place pork in bottom of crock pot. Arrange onion and
peppers on top of pork. Whisk together Hoisin
sauce,rice vinegar, chili sauce, sesame oil, garlic
and red pepper flakes. Pour over pork.
Cover and cook on high 4 to 5 hours until pork is
tender. Let pork stand 10 minutes before slicing.
Serve with vegetables and sauce.
