     Skillet cornbread (moist)

Ingredients
1 c finely ground yellow cornmeal
1 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
2 tb granulated sugar
1/2 tsp salt
1/2 tsp chili powder
2 large eggs
1/2 c sour cream
 
1 c half and half
6 tb butter melted
2/3 c fresh or frozen corn - thawed and drained if frozen

Instructions
Position a rack in center of oven and preheat to 400. Generously butter sides and bottom of 8-10 inch skillet.
In large bowl whisk together the cornmeal, flour, baking powder, baking soda, sugar, salt and chili powder. In a medium bowl, whisk together eggs, sour cream, half and half, 4 tb of the melted butter (allow to cool before adding) and corn. Add the egg mixture to cornmeal mixture and stir until just combined. Don't overmix.
Heat skillet over medium heat. Pour cornmeal batter in skillet, jiggling to level out.
Bake In oven for 10 minutes. Remove skillet from oven and pour remaining butter over top. Return to oven and bake until golden brown and toothpick inserted in middle comes out clean. About 10 minutes more. Cool before serving.
