     Lou Campbell Pumpkin Pie (2 pies)

Ingredients
1-1/8 cups Libby's cream style pumpkin
3/4 cup brown sugar
3/4 cup white sugar
3 Tablespoons melted butter
3 eggs
1 cup coffee cream
1/2 cup canned milk
2 Tablespoon flour
1/2 cup hot milk
 
2 teaspoons cinnamon
1/2 teaspoon nutmeg
3/4 teaspoon salt

Instructions
-Stir all dry ingredients except sugar through pumpkin. Mix brown sugar with hot milk, then canned milk and add to pumpkin. Mix well. Add coffee cream.
-Whip eggs and white sugar very light and thick. Add to other ingredients. Add butter last, and mix thoroughly.
-Pour into 1 large, and 1 small pie tins. Put in hot oven at 400 degrees for about 5 minutes. Then to 325 until done. If center is still runny, I put on 2nd shelf few minutes.
STEP by STEP- .....Stir Flour, cinnamon, nutmeg and salt. .....Mix brown sugar with hot milk, then canned milk. .....Add to pumpkin, mix well. Add coffee cream. .....Whip eggs and white sugar very light and thick. .....Add to all previous ingredients. .....Add butter last and mix thoroughly.
