     Oriential Chicken and Rice Casserole

Ingredients
1 bag success rice (I use 2 cups water & 1 cup rice)
2 cups cubed cooked chicken
1 T soy sauce (I use low sodium)
2 T lemon juice
1 can (1 lb) bean sprouts, drained
1 can (5 oz) water chestnuts,drained and sliced
3/4 - 1 cup mayonaise
1 cup finely chopped celery
1/4 cup finely chopped green onion
 
1/2 t salt
1/8 t pepper
1 can (3 oz) chow mein noodles

Instructions
Cook rice according to package directions. While rice is cooking combine rest of ingredients except chow mein noodles Put in a buttered 2 quart casserole dish and bake uncovered in 375 degree oven for 15 minutes, add chow mein noodles and bake 5 minutes more.
We watch our sodium so I leave out the salt.
